In The Beginning

Twice baked hereford hop souffle, rhubarb compote, beetroot vinaigrette.

Pickled west coast mackerel, hot smoked wild salmon, avocado sorbet, dill jelly.

Cornish lobster ravioli, squash puree, caramelised pineapple, chilli and vanilla dressing.

Duo of chicken liver patés, red onion and cranberry marmalade, candied endive.

Tartare of celeriac and jerusalem artichoke, pan fried girolles, chive oil.

The Main Event

Sirloin of Herefordshire beef, braised shin, horseradish mash, trompette de mort mushroom puree, red wine and thyme

Roast duck breast, pak choi, dried mandarin, dried lychee's, sesame and soy dressing.

Baked old spot pork fillet in brioche crumbs, boiled ham hock, parsley and grain mustard.

Loin of gorsley lamb, crab tortolini, curried parsnip nage, mint oil.

Roast wild sea bass, fennel fondant, shellfish butter

Fine tart of creamed leeks, roast shallots, poached hen egg, garlic velouté
